Plant ground elder in your garden on purpose? Oh yes! Before you gasp in horror: the variegated cultivar is an absolutely fantastic, luminous ground cover for the darkest and most difficult corners of the garden. It brings light into the darkness, forgives every gardening mistake, and is, incidentally, an incredibly healthy wild vegetable that keeps growing back.

Per plant in a 7cm pot.

Growth & Appearance

  • Lifespan: Perennial, absolutely hardy, and indestructible plant.

  • Height: Grows as a dense carpet of leaves about 15 to 30 cm high (up to 60 cm when in bloom).

  • Habit: Ground-covering. The beautiful, hand-shaped leaves are fresh green with a broad, irregular creamy-white margin.

  • Bloom: From June to August, delicate white umbel flowers appear, hovering over the foliage like tiny umbrellas.

Origin The wild form is native to large parts of Europe and Asia and prefers growing in shady, nitrogen-rich deciduous forests.

Nutrients Ground elder is a genuine local superfood! It contains significantly more Vitamin C than lemons, as well as plenty of iron, potassium, magnesium, and carotene. Additionally, it contains valuable essential oils that give it its fine, characteristic flavor.

Usage

  • In the kitchen: A fantastic, free wild vegetable! The young, tender leaves taste like a sophisticated mix of parsley, carrot, and a hint of celery. Perfect for fresh pesto, wild herb salads, green smoothies, or as a spinach substitute.

  • For insects: Ground elder is an enormously important ecological stepping stone in the garden! The flat umbel flowers serve as perfect "landing pads" for countless beneficial insects. Hoverflies, tiny wild bees, parasitic wasps, and specialized beetle species that cannot reach deep flower cups find a well-laid table of easily accessible nectar here in midsummer.

  • In the garden: The ultimate problem-solver for dry shade (e.g., under large, deep-rooted trees) where hardly anything else will grow.

  • As an elegant planting partner: Visually, the 'Variegata' variety is an absolute win for garden design! The delicate white umbel flowers and the strikingly light variegated foliage create a breathtaking contrast to bold colors. For example, combine it as an underplanting with bright red ground cover roses: the soft white of the ground elder flowers perfectly highlights the roses' red blooms and makes them shine even more intensely – for a wonderfully romantic and harmonious overall look in the flower bed.

History In the Middle Ages, ground elder was a highly valued medicinal and useful plant. The botanical name podagraria is derived from "podagra" (gout). It was cultivated in monastery gardens for centuries to treat gout and painful rheumatism. Only later did it escape into the wild from gardens.

Curiosities The vegetable that never runs out! Instead of being annoyed about having a less-than-green thumb, this plant provides a guaranteed sense of achievement. Ground elder is so vigorous that you have to literally "eat it up" to keep it in check. The more radically you harvest it for the kitchen, the more tender and bushy it regrows. A perpetual motion machine in the vegetable garden! Moreover, the 'Variegata' variety has a brilliant visual effect: the white portions of the leaves beautifully brighten up deeply shaded, dark corners of the garden.

Location, Care & an IMPORTANT warning regarding planting

  • Location: Partial shade to shade. Too much direct midday sun will burn the white leaf margins.

  • Soil: Undemanding, but loves moist and loose soil.

  • Care & propagation (Caution!): The incredible survival power of ground elder lies underground. It spreads via white root runners (rhizomes). The fascinating thing about this: a completely new plant will reliably sprout from every tiny piece of root left in the ground! While this makes propagation a breeze for you (simply cut off a piece of root and replant it), it requires planning in a garden bed.

  • Expert tip: It is best to plant it directly in a pot, window box, or use a deep root barrier (e.g., a large mortar tub with the bottom removed) when setting it in the bed. This way, you can keep its luminous leaves, the insect pasture, and the delicious harvest perfectly under control!
