  • The soil: Plant your strawberries in humus-rich, loose, and well-draining soil. The roots do not tolerate waterlogging.

  • Proper watering: Keep the soil consistently moist. Especially during flowering and fruiting, the plant appreciates regular watering, ideally directly at the root area and not over the leaves.

  • Important Pro Tip (Pollination): The "Exotic White" needs a little help for maximum yield. Simply plant a classic red strawberry variety from my offers in close proximity (a ratio of 1 red to 4 white plants is perfectly sufficient). The red strawberries act as ideal pollen donors!

  • Winter hardiness: The plant is robust and winter hardy. Lightly covering it with brushwood in the first winter protects it from severe black frosts, after which it reliably sprouts again in spring.

White Pineapple Strawberry Dream (Sponge Cake Style)

This cake looks incredibly elegant due to the contrast of the white berries on a light cream.

Ingredients

For the base:

  • 3 eggs (size M)

  • 100 g sugar

  • 1 packet vanilla sugar

  • 100 g flour

  • 1 tsp baking powder

  • 1 pinch salt

For the topping:

  • 400 g pineapple strawberries (freshly picked)

  • 250 g mascarpone

  • 200 g low-fat quark

  • 50 g powdered sugar

  • 1 tbsp lemon juice

  • Optional: A little grated organic lime zest (pairs wonderfully with the pineapple aroma)


Preparation

  1. Bake the base: Preheat the oven to 180°C (top/bottom heat). Beat eggs with sugar and vanilla sugar for about 5 minutes until the mixture is light white and thick. Mix flour, baking powder, and salt and carefully fold in (do not stir too vigorously, so the air remains!).

  2. Bake: Pour the batter into a greased springform pan (26 cm) and bake for approx. 15–20 minutes until golden brown. Let cool completely.

  3. Prepare the cream: Mix mascarpone, quark, powdered sugar, and lemon juice until smooth. If desired, fold in the lime zest – this enhances the "tropical" kick of the white berries.

  4. Spread: Distribute the cream evenly on the cooled base.

  5. The highlight: Carefully wash the pineapple strawberries (they are often more sensitive to pressure than red varieties!), remove the green, and either halve the berries or arrange them closely together on the cream.

  6. Finishing: For extra shine, you can add a light cake glaze (mixed with apple juice), but plain, the cake looks almost more modern with its white-on-white look.

Tip: If you mix in a few normal red strawberries, you'll create a great optical "negative effect" that will be a talking point at any coffee table!
